This brand is brewed by Nanyo Jozo in Hanyu City, Saitama Prefecture. The brewery is run by a sister, her husband, and younger brother. Although it is a small brewery, it is well known for its delicious taste. It is now a hard-to-find brand.This is the “Jikagumi(Direct bottling)” version, which is released in very small quantities with different rice. The new sake is brewed during winter season and sealed in the bottle immediately at the tank. It is a fresh, unfiltered, unfiltered sake with a well-balanced aroma and a small amount of gassiness from being stored in bottles at sub-zero temperatures (-5°C) for several months before release. It is a direct draft of the new “THE PREMIUM” series, made from 40% Yamada-Nishiki rice, which is highly suited for sake brewing.

Yokoyama Princess Michiko Junmai-DaiGinjo Nama-sake / よこやま Princess Michiko 純米大吟醸 生酒

Princess Michiko" is a rose with beautiful contrasting green leaves and reddish-orange petals, which was presented to the  Empress, then Crown Princess Michiko, by Queen Elizabeth of the United Kingdom. This sake is a special sake brewed with the flower yeast isolated from the rose. Please enjoy the gorgeous and elegant aroma produced by the noble floral yeast. This Junmai Daiginjo is brewed with PM-1, a yeast successfully isolated by Tokyo University of Agriculture from the noble, bright orange color of rose flowers. The elegant and gorgeous sweet aroma unique to the flower yeast is a perfect match for the mellow sake quality of Yokoyama.

Yamma No.12 Junmai-Daiginjo Muroka Genshu / 山間 12号 純米大吟醸 無濾過原酒 中採り直詰め

Yamma No. 12 is a special sake brewed by Niigata Daiichi Shuzo. This sake is a Junmai Daiginjo Nakadori direct-filling, unfiltered, unrefined sake, produced in very limited quantities. Characteristically, the sake rice called “Koshitanrei” harvested in the local terraced rice fields is polished to 50%, and only the “Nakadori” portion, which is said to have the most stable aroma, is used by direct filling from the Kameguchi. As a result, it has a very gorgeous aroma and smooth mouthfeel, with a concentrated rich sweet flavor. In addition, after being fired in the bottle once, it is aged in ice-cold storage for about six months, which gives it a very refined and noble flavor.
