“To Mikotsuru Beyond “
Mikotsuru, a brewery located in Shimo-Suwa, nestled at the foot of Suwa Taisha shrine Akimiya in the heart of Shinshu,, has renewed its structure and made a new start in 2018. Our goal is not to reproduce the taste of the past. Our goal is not to reproduce the taste of before the suspension, but to go beyond that and deliver “exciting sake” to as many people as possible. YamadaNishiki, the king of sake rice, is grown by contract farmers in Azumino City, where spring water from the Alps flows. The sake is bottled immediately after pressing and matured in a refrigerator at -5℃ until shipping. (Brewery)
