About the Sake
Eikofuji’s first Junmai Daiginjo-which is red like a rosé wine-using “red yeast”.
Red yeast is a yeast that turns “rosé” when inactivated and does not contain any artificial coloring.
This sake is a challenge for Eikoufuji in 2024, and we are looking forward to the future.
About the Taste
Its low alcohol content makes it light on the palate.
Yet, after a rich sweetness, the strong acidity balances the flavor and gives it a sweet and sour cherry-like taste.
