About the Sake
This is a commemorative sake from the first tank of brewing, which was first brewed in December of the year.
It is made from Ehime’s first sake rice “Shizuku Ehime(しずく媛),” which was registered as a variety in 2007, and Ehime’s new yeast “EK-7″.
“EK-7” is characterized by its high aroma and mild acidity. This is the first drop of sake brewed by Iyo Kagiya, which returns to its original intention of “brewing sake every year as a first-year student”.
